Turkey and Broccoli Baked Mac & Cheese
This is a great dinner because it’s delicious cheesy comfort food but also healthy because broccoli and turkey (that’s how that works right?). Plus I’m a big fan of recipes where you make it and have lots of leftovers for dinner and lunch for the week. I made it with turkey for some added protein but of course you could leave it out to make this vegetarian.
INGREDIENTS
340 grams (12 oz) macaroni pasta
2 heads of broccoli
1 small onion
1 tsp. olive oil
1 tsp. chopped garlic
450 grams (1 lb) ground turkey
2 cups milk
1 cup chicken broth
1/4 cup flour
1 tsp. oregano
1/2 tsp. paprika
1 tsp. rosemary
Salt and pepper
2 1/4 cups shredded cheddar cheese, divided
1/2 cup Italian bread crumbs

Medium saucepan or deep skillet

DIRECTIONS
Cook pasta according to directions, drain and set aside.
Steam broccoli for 3-4 minutes until bright green but still crunchy, set aside.
Preheat oven to 375°F. Spray baking dish with cooking spray, set aside.
Chop the onion. Heat olive oil on medium heat. Add onion and sauté for 3 minutes. Add garlic and turkey. Cook until turkey is browned, about 15 minutes. Transfer to a bowl, and drain the pan of extra fat.
In the same pan over medium heat, pour in milk and chicken broth. Add flour, oregano, paprika, rosemary, salt and pepper. Bring to a boil whisking frequently, until sauce becomes smooth, about 5 minutes.
Remove from heat and stir in 2 cups of the shredded cheese. Whisk until cheese has melted completely. Add pasta, broccoli, and turkey into the sauce and stir until everything is covered.
Pour the mixture into the prepared baking dish. Top with bread crumbs and the remaining 1/4 cup of the shredded cheese.
Bake for 10 minutes. Then turn the oven on to a high broil and cook for an additional 5 minutes to create a crispy top.
