Vegetable and Sausage Pasta in Cream Sauce
This pasta is a delicious dinner you can make from scratch. I wanted to create a dish full of veggies and protein so I chose red peppers, sun dried tomatoes, spinach and hot Italian sausage. They all paired well with a cheesy cream sauce with a hint of lemon zest. However I think you could swap out veggies and protein based on what you have at home because the cream sauce would go with most things you can add to a pasta.
INGREDIENTS
4 hot Italian sausages
350 grams medium pasta shells
Salt
1 red bell pepper
1/2 cup sun-dried tomatoes
1 tbsp. butter
3 cups of spinach
1 cup heavy cream
1 1/4 cups grated or shredded parmesan cheese
Zest from 1 lemon
1 tsp. basil
1 tsp. oregano
1/2 tsp. freshly ground black pepper
Italian parsley for garnish

DIRECTIONS
Preheat oven to 400 degrees F. Line a baking sheet with foil and lay out sausages. Bake for 25 minutes.
Bring a large pot of water to boil. Add salt. Cook pasta according to package al dente. Make sure you remove from heat and drain the pasta before it is fully cooked because it will cook a bit more in the sauce and you don’t want mushy pasta!
Dice red pepper and cut sun-dried tomatoes in half. Slice cooked sausages.
In your deep skillet or pot, melt butter on medium heat. Add red peppers and cook for 4 minutes. Add spinach and tomatoes and cook for another 2 minutes.
Turn heat to low and add the cream, parmesan, lemon zest, oregano, basil., and black pepper. Mix well until cheese is fully melted.
Add in cooked pasta and sausages. Cook for 3-5 minutes.
Serve and garnish with more fresh black pepper and Italian parsley.
