I love apple crisp! First off it’s so easy to make and second I think it’s better than apple pie! My family wanted to get together on Thanksgiving weekend but also do something that would be safe for all of us so we had appetizers in my sister’s backyard around a bonfire.

I’m sure many others are having adapted family and friend get togethers this year. These apple crisps are perfect for social distancing time because they’re so easy to share. I made two versions, both mini muffin and regular muffin size. I prefer the regular muffin size but you can make either depending on your preference!

I made both mini and regular muffin sized versions! I prefer the regular size ones because you get more filling, but if you’re making these for a larger group the mini ones would be perfect.

INGREDIENTS

Apple Mix
2 cups chopped apples
1 tbsp. granulated sugar
1 tsp. cinnamon
1 tsp. shredded fresh ginger
1/4 tsp. allspice
1/4 tsp. nutmeg
2 tbsp. water

Crumble
3/4 cup all-purpose flour
1/2 cup brown sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup butter, room temperature
3/4 cup oats
1/4 cup chopped pecans (optional)

YIELD

12 regular sized, 24 mini size

TIME

  • Prep - 25 minutes

  • Bake - 15-25 minutes

TOOLS

  • Medium saucepan

  • 1 large bowl

  • Food processor (optional)

  • Muffin tin (regular or mini)

DIRECTIONS

  1. Mix all ingredients for the apples together in a medium saucepan. Put the pan over medium-high heat to bring to a bubble. Continue mixing and cook until apples are just tender, about 5 minutes. Remove from heat.

  2. Preheat the oven to 350°F. Grease whichever muffin tin you are using.

  3. In a large bowl mix the flour, brown sugar, cinnamon, and salt. If you have a food processor put this mixture in the bowl of your processor.

  4. Cut the butter into cubes. If using a food processor, add in and pulse until you have fine crumbs. If not mix gently by hand until the mixture forms fine crumbs.

  5. Add in the oats and pecans.

  6. For each muffin tin, press some of the crumble into the bottom and about halfway up the sides of the cup. Scoop in a spoonful of the apple mixture. Sprinkle some of the crumble on top.

  7. If using a regular muffin tin, bake for 20-25 minutes until the crumble has browned around the edges. If using a mini muffin tin, bake for 15-20 minutes.

  8. Let set in the pan for at least 10 minutes. Then use a sharp knife to pop out each one and allow to cool on a wire rack.

  9. Serve alone or with whipped cream or vanilla ice cream!
