Apple Cinnamon Cake
I know I’m late in the season for sharing apple recipes (we just got our first snow here in Toronto), but the apples in the market are still fresh and baking apple treats are always delicious. I made this a friend one rainy Saturday while we stayed in and watched a movie. I love the crispy sugar topping on this cake. Plus anything with apple cinnamon flavours is good with me.

INGREDIENTS
Brownies
2 large apples*
1 1/2 cups brown sugar
1/3 cup canola oil
1 egg
1 cup buttermilk
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
2 1/2 cups all-purpose flour
Cinnamon Sugar Topping
1/2 cup white sugar
1 tsp. cinnamon
1 tbsp. butter
YIELD
1 cake

Prep - 20 minutes
Bake - 45 minutes
TOOLS
2 bowls, large and medium
Microwave safe bowl or measuring cup
9 x 13 inch cake pan
DIRECTIONS
Preheat oven to 325 degrees F. Lightly spray or butter a 9 x 13 inch sheet cake pan. Set aside.
Wash and finely chop apples. Set aside.
In a large bowl mix brown sugar, oil, and egg. Add in buttermilk and vanilla.
In a separate bowl, mix baking soda, salt, and flour. Pour dry ingredients into wet and mix until just combined. Fold in chopped apples.
Pour batter into prepared pan and spread evenly.
In a microwave safe bowl or measuring cup, melt the butter. Mix in cinnamon and sugar.
Using your hands, sprinkle the sugar topping on top of the batter. Sprinkle evenly over the entire cake, and press in slightly as needed.
Bake for 45 minutes until a toothpick inserted in the centre comes out clean. Let cool for at least 15 minutes
Serve warm and top with whipped cream if you would like!

ADAPTATIONS
*You can use whatever apples you have at home. I used Mackintosh. Typically I bake with Granny Smith, but I often don’t find fresh Granny Smith apples locally in Ontario.
