A few months ago we were relying on online order and pickup for our groceries. I’m very grateful for all of the folks who have been working on the frontlines in groceries stores during this pandemic and I’m sure dealing with some challenging customers.

One time I wanted to order tomatoes. The PC website lets you pick a quantity and I picked 4 tomatoes on the vine, or so I thought. What I actually purchased was 4 groups of tomatoes on the vine, so we got 11 tomatoes! For 2 people!!!

I always strive to not waste food, it’s something we can definitely do better in our home. But I’m very proud that we ate all 11 tomatoes and didn’t throw a single one out. How we ate 11 tomatoes in 2ish weeks? By making some salsa! If you have a food processor this salsa is quick and easy!

INGREDIENTS

4 ripe tomatoes
2 jalapeños
3 cloves of garlic
1/2 red onion
2 tsp. cumin
2 tsp. granulated sugar
1 1/2 tsp. salt
3 tbsp. lime juice
1/3 cup fresh cilantro (optional)

YIELD

1 large bowl of salsa

TIME

  • Prep - 5 minutes

  • Blend - 5 minutes

TOOLS

  • Food processor

DIRECTIONS

  1. Core and quarter the tomatoes. Peel and quarter the half onion. Peel and halve the garlic cloves. Remove the stems of the jalapeños and optionally remove the seeds. I left the seeds in to make the salsa spicy.

  2. Put all of the ingredients in the food processor and pulse until mostly smooth.

  3. Taste and add more cumin or lime juice if desired. Store in the fridge for up to 3 days.

I live with someone who doesn’t like cilantro so I left it out and the salsa still tasted great!
