Easy Irish Stew

The winter weather has fully arrived in Toronto, which meant I was craving warm and hearty meals and excited to use my new Crock Pot Multi Cooker. It’s both a slow cooker AND a pressure cooker (Instant Pot)! It’s great having the one device that can do multiple things, especially with our limited storage space. I’ve loved using my previous slow cooker for making soups, chilis, stews, and other meat dishes for the past few years, so I have many recipes to share for slow cooking (stay tuned!). Pressure cooking is new to me and I’m excited to experiment with that and hopefully share some recipes for pressure cooking as well.

As you will see below, this is not a traditional Irish stew. Irish stew traditionally has lamb and potatoes in it while this recipe has beef and extra veggies. I’m calling this version “Easy Irish Stew” because it should be super easy for you to find all these ingredients in your cupboard or grocery store and then dump them all in the crockpot and come home to a hearty dinner.

INGREDIENTS

1.5 - 2 lbs. stew beef, cubed
1 28 oz can crushed tomatoes
2 cups carrots, diced
1 cup celery, diced
1 yellow onion, diced
3/4 cup pearl barley
5 cups beef broth
t tsp. salt
1 bay leaf
1/2 tsp. sage
t/2 tsp. thyme
1/2 tsp. black pepper

YIELD

6 servings

TIME

  • Prep - 10 minutes

  • Cook - 4-8 hours

TOOLS

  • Slow cooker

DIRECTIONS

  1. Prepare ingredients.

  2. Add to slow cooker and mix until combined.

  3. Cover and cook on low heat for 8 hours or high heat for 4 hours.

ADAPTATIONS

As I said above, more traditional Irish stew has lambs and potatoes. You can substitute lamb for beef and add in diced potatoes if you prefer.
